Relatively new cut discovered in the last few years by chefs and foodies alike. Pan sear medium-high for 3 minutes per side for a great medium rare doneness. Remove from heat, top with butter and herbs of choice. Allow to rest for 5-10 minutes before serving.

My new favorite steak. To me it’s a leaner version of the hangar steak. Very unique cut. I just dry rubbed with Montreal Steak seasoning, some Smokey sweet rub from Raths Deli and a little of their coffee seasoning, heated my cast iron skillet for 8 minutes then cooked a thicker steak for 4 minutes per side on medium high heat then finished it for 4 minutes at 375 degrees in the oven. Let it rest for 6 minutes under a foil tent. Perfect. The thinner one (about .7 pound) I did for 3 minutes per side and finished it in the oven for 4 minutes turning it at 2 minutes per side. Let it rest. Perfect medium rare
